Anticaking agent

Anticaking agent is a powdered or granulated material that is added to bakery premixes, cake premixes, and other powdered or granulated materials to avoid lump formation (caking) and to make packing, transportation, flowability, and consumption easier. Because moisture causes the majority of product caking or formation of lumps , anti-caking chemicals either absorb moisture or serve as a sealant, repelling water and oil.
